I'm finding it hard to motivate to cook on these hot summer days. When I do, I want to make it last as long as possible. Enter, the rice trick. When we have rice, I like to cook more than we need. I save the leftovers in the fridge, but if you've ever done that, you know that the rice dries out and clumps up icky in the microwave. My trick is to sprinkle it with a little chicken stock before I zap it, and if fluffs right up.One less reason to turn on the stove when it is stifling outside.
